Eton Mess












Serves 4

Ingredients

5oz Caster Sugar

7oz Strawberries


Puree the above together

and put to one side.


3.5oz caster sugar

15floz double cream

4 meringue nests

(broken into rough pieces)

8oz strawberries roughly chopped

1 teaspoon vanilla essence


Beat the caster sugar, double cream and vanilla essence together to form soft peaks. Stir in the strawberries and meringue. In a serving glass, starting with the puree layer made earlier, alternately with the cream mix. Garnish with mint and a handful of raspberries and cherries (optional) then serve.
