Pancake Batter

Makes 8 pancakes  

Preparation time 30 mins to 1 hour

Cooking time less than 10 mins


Ingredients  

Plain flour                            120g/4oz

Salt                                      Good Pinch

Caster Sugar optional            ½ ts

Only if making sweat pancakes

Eggs                                       2

Milk                                     210ml/7fl

Water                                    90ml/3fl

Vegetable oil                            1 tbsp


Method

1. Put the flour and the salt in a bowl and mix.

2. Make a well in the centre and crack in the eggs.

3. In a separate bowl mix together the milk and the water.

4. Beat the eggs into the flour with a wooden spoon and gradually beat in the milk and water mixture to get a smooth liquid the consistency of cream.

5. Stir in the oil and allow to stand for 30 minutes before using.

Notes

Use 3 tbsp per pancake in pancake pan makes 7-8.
