Vegan Pancakes









Makes eight pancakes


Ingredients                              g  

Plain flour                              150  

white sugar                                2 tablespoons  

baking powder                           2 teaspoons  

Salt                                          1/2 teaspoon  

Water                                     156  

Coconut milk                          158  

Oil                                             2 tablespoon  

Vanilla extract   


Method

Sift the flour, sugar and salt into a large bowl. Whisk the water, Coconut milk and oil together in a small bowl. Make a well in the centre of the dry ingredients, and pour in two thirds or the liquid mixture. Whisk tougher using electric whisk, add the rest of the liquid. Allow to stand for ½ to 1 hours.

1. When ready to cook the pancakes sieve in the baking powder and mix in gently.

2. Cook in Pancake pan (add a little oil), 2 ½ to 3 tbsp. per pancake. Cook until “set” and brown, then flip or use second pan. Again cook until browned. Repeat for rest. Should make eight pancakes.

3. David’s Notes: Pancakes a quite fragile when cooking and colour quite fast.
