Creole Chicken in the Slow Cooker









Ingredients

Serves: 4 

4 skinless, boneless chicken breast fillets

salt and pepper to taste

Cajun seasoning to taste about 2 teaspoons

1 (400g) tin chopped tomatoes

1 stalk celery, diced

1 green pepper, diced

3 cloves garlic, minced

1 onion, diced

100g (4 oz.) mushrooms, sliced

1 fresh green chilli, seeded and chopped


Method

Prep: 10min › Cook: 12hr › Ready in: 12hr10min  

1. Place chicken breasts in slow cooker. Season with salt, pepper and Cajun seasoning to taste. Stir in tomatoes, celery, green pepper, garlic, onion, mushrooms and green chilli.

2. Cook on Low for 10 to 12 hours or on High for 5 to 6 hours.

David’s Notes

Made first on 16/10/2013, quite good bit a little Lacking in body and flavour although hot enough. Suggest changes to recipe.

Add 1 red pepper, one or two “stock pot” gels, and perhaps a little sugar.
