David’s Sausaage Casserole
Ingredients
Serves: Two To Three
6 sausages
6 slices smoked or unsmoked bacon
3 Garlic Cloves crushed
1 swede, peeled and chopped
2 carrots, peeled and chopped
2 leeks, chopped
1 tin tomatoes
100ml/3½fl oz. red wine (optional)
1 tbsp dark brown muscovado sugar
1 dsp Worcestershire sauce
1 dsp Balsamic
2 bay leaves
2 tbsp tomato puree
herbs such as paprika and mixed herbs
3–4 sprigs of fresh thyme
250ml chicken stock
salt and freshly ground black pepper
Method
1. Pre heat the slow cooker.
2. Brown the sausages and the bacon under the grill, or in a frying pan.
3. Fry the leeks for a few moments, then add the garlic and fry a little longer.
4. Put the stock into the frying pan together with the wine and carrots, bring to the boil and cook for a couple of minutes. Add the Worcestershire sauce, tomato puree, sugar and Balsamic.
5. Add to the slow cooker; add sweet potatoes, bay leaves, herbs. Now add leeks, bacon, sausages and anything else that I have forgotten.
6. Put on the lid and cook in the slow cooker cook on High for 3 to 4 hours or Low for 9 hours. Alternatively, bake in the oven, covered, 200 C / Gas 6, for 2 hours. I do High for 3 hours then Low for 3 hours.
7. Check for seasoning when almost done .
Tip
If the mixture is too runny then add a little flour (mixed with a little water) to the mixture. If it becomes too thick add a little more stock or wine.
