Dolcelatte® which means 'sweet milk', is a mild and creamy blue veined cheese with a sweet yet tangy flavour. It combines well with sweet, ripe pears and peppery watercress. This salad is quick to make and should be assembled just before serving as a starter for entertaining, or an accompaniment to cold meat.

Ingredients
2 ripe Comice pears, peeled
3 tbsp Waitrose Apple Pressé Juice
2 tbsp olive oil
2 tbsp chopped fresh chives
2 cooked beetroot, rinsed, dried and cut into thin strips
100g pack Waitrose Walnut Halves
85g pack Waitrose Solo Watercress
150g Waitrose Dolcelatte® Full Fat Soft Cheese, roughly chopped
Freshly ground black pepper
Instructions
Halve the pears and remove the core with a knife. Cut each half into 8 slices and place in a large bowl.
Make the dressing in a small bowl. Whisk together the apple pressé, olive oil, chives and black pepper, then pour over the pears.
Add the beetroot strips, walnut halves, watercress and 100g Dolcelatte® cheese to the bowl. Toss the ingredients gently to coat with the dressing. Sprinkle the remaining cheese over and serve immediately.
Cook's tips: the cheese can be broken up into small pieces, using your hands, if preferred.
Ensure that you use ripe pears for this dish.
An easy way to finely chop the chives is to bunch them together and snip into small pieces with a pair of sharp kitchen scissors.
