coconut rice

Ingredients
Rice
1 x 400g tin of light coconut milk
1 coconut milk tin (300g) of basmati rice
½ a lemon
Method
Pour the coconut milk, 1 tin's worth of rice and 1 tin of boiling water (use a tea towel) into the large pan • Add ½ a lemon, stir well, cover and cook for roughly 10 minutes, stirring occasionally, then turn the heat off

• 300g basmati rice
• 2 tablespoons coarsely grated creamed coconut
Method
When there’s about 15 minutes to go, cook the rice in a large pan of salted water according to the packet instructions. Drain in a colander and leave to steam dry before scattering over the coconut.
